Normal people who has no single idea about baking normally breaks down the kinds of cake based on their names and if you go focus on that you sure are going to need forever to name it all. The difference is that the eggs are whipped separately unlike the sponges which is not. However, once they are good to go, they will be mixed together right after. This method is kind of necessary because it allows the mixture of the cake be little drier than sponge.

Chiffon cake are originally created in Amerika by salesman since then the recipe has been well known and other countries have made known of that as well. This uses baking powder, vegetable oil, eggs with separated whites which has been beaten to a soft peak. This is what makes it batter and it gives you the tender crumb flavor after its done.

Next you have one of the weirdest kind of cakes probably, its the flourless one. This is bake completely with zero flour on the ingredient which is kind of hard to imagine because people have always thought that to make a cake, there needs to be a flour in it. Anyway, this kind of method are common in making cheesecakes though.

This is half filled with water that helps in insulating the delicate creamy texture while being in a strong heat from the bottom of the oven. This then has a remarkable silky texture and most baker are referring to it as a cake in a water bath. Well, its uniquely tasty along with its savory texture indeed.

These are the most common types of cake baking methods. There still are many possible ways of doing so and it will depend usually on the tradition and the country as well.
